These cocktail sized oysters are grown in surface cages within a cove close to the Atlantic Ocean on the Damariscotta River estuary. The unique characteristics of the cove where they are raised combined with the colder ocean waters impart a wonderful deep cup and healthy rich sweetness.

Pleasant Cove Oyster

After working as a lobsterman for over 30 years, Clay wanted to try something different. His decades working on the Maine coastline gave him an intimate knowledge of the places where wild fish, crustaceans, and shellfish thrived. After consulting with friends and aquaculturists in the region, he decided to start an oyster farm. Clay learned about local farming methods by volunteering at Mook’s Sea Farm and taking classes at the Darling Center in Maine to learn the craft.

Using this training and his experience on the water, Clay found the perfect place on the Damariscotta River called Pleasant Cove, where the ocean's currents created a nutrient rich swirl. It was untouched by other farmers and is now Clay’s oyster haven that produces a unique surface cultivated product unlike others on the river.
