  • The oysters we ship will be good for up to 7-10 days while they are kept in a refrigerator.

  • When you receive your package, we recommend placing the oysters in a bowl or tray (open container) and putting them in your refrigerator. The bowl/tray will make sure small shells don’t get everywhere as well as water from the oysters. Putting a damp cloth on top will help to keep the oysters maintain humidity as well.

  • For safety and freshness, avoid letting oysters sit in melted ice or water. Oysters exposed to warmth or fresh water for too long can spoil and become unsafe to eat.

  • Our oysters are shipped via FedEx Priority Overnight shipping in a recyclable insulated package with frozen gel packs to keep cool up to 48 hours. You will receive tracking via email and no signature is required.

Unicorn Oyster Co. is a small farm focused on every aspect of quality and freshness. There goal is to raise clean, vibrant, and flavorful oysters, then delver each oyster directly to chefs and consumers as fresh as the day it leaves the water. Nestled mid-river on the Damariscotta, the farm benefits from the dynamic upwelling geography of the river as tide flows in from the ocean, as well as, flow of nutrients from the shallow neighboring coves. Their oysters are known for their clean approachability, tangy brininess, and flavors of sweet cucumber melon. Carefully nurtured and precisely handled throughout their lives, these oysters embody what it means to be a true Maine classic.

What began in 2019 as a way to stay grounded during the pandemic quickly transformed into a thriving passion. Founder Austin Watroba launched the farm, soon joined by Chris Burns, and together they’ve built Unicorn Oyster Co. into one of New England’s most recognized producers. With the guidance of Eric Peters, their oysters are celebrated today among the most sought-after in New England.
