From a family-run farm in western Greece, set along the Acheloos River where cold mountain water runs down toward the Ionian coast. The caviar is hand-harvested in small lots, a slower way of working that shows in the tin.

The pearls are medium and warmly golden. The flavor is rich and nutty, rounding into a smooth, buttery finish. A clean, generous osetra, as good on its own as it is at the center of a board.

Serve it well chilled with a mother-of-pearl spoon, on its own or over a warm blini. It pairs naturally with a cold glass of Champagne, or with a few Siren Coastal oysters when you want the full table.
